It was created at Nizam’s, a famous eatery that wanted to make kebabs more accessible for busy Kolkatans on the go. Wrapping juicy kebabs in a soft paratha with onions and sauces, they came up with a convenient, delicious package — thus, the chicken roll was born. Over time, it became a culinary icon, with variations springing up across the city.

What Makes It Special?

The classic Kolkata Chicken Roll is made by wrapping juicy, spicy chicken pieces in a flaky paratha. The paratha is usually fried with a light coating of egg, adding richness to the roll. Inside, the chicken is marinated with a mix of spices, and the roll is garnished with sliced onions, chillies, and a dash of tangy lime.
